"Amber" is her skin contact take on Assyrtiko, the great Greek white grape best known from Santorini but grown here on the Peloponnese mainland. The grapes get five days on the skins, fifteen days of wild fermentation in stainless at cool temperatures, then three months on the lees before bottling unfined,
