Estate grown purple sweet potatoes are hand harvested and hung from rafters to aerate and dry, transforming and concentrating the flavors. The potatoes are eventually steam cooked and fermented with a special koji rice prior to distillation. Every drop of this release comes from the 2020 harvest.
